Forget JT; on September 21, Grey's Anatomy is bringing sexy back. Mr. Food Musings and I are big fans of a few TV shows (hmm, that last one might be all me...) that are going to start up again soon, and that means one thing: I need a repertoire of easy-to-make dinners that can be on the table (e.g. the coffee table) in time for us to watch. Last night, I did a dry-run and made the first thing that came to mind: baked chicken in a sauce of honey, mustard and curry; smashed potatoes with a dribble of half-and-half, some butter and salt; and sliced tomatoes on a bed of basil sprinkled with feta cheese, balsamic vinegar and olive oil. My mom sent me the chicken recipe last week, and it turned out really nice -- it was easy (but it takes an hour to bake so plan ahead) and though the ingredient list made me suspicious that it was a bit too loudly seasoned, the result was quite mild. Leftovers will go over warmed corn tortillas tonight with a dusting of cheese and fresh salsa.

1/2 cup honey
1/4 cup unsalted butter, melted
1/4 cup yellow mustard
1 tsp salt
1 tsp curry powder
whole chicken cut up (or substitute any combo of bone-in or boneless breasts, thighs, legs etc.)
Preheat oven to 375ยบ. Stir together the first 5 ingredients till blended. Dip each piece of chicken in mixture & coat thoroughly. Arrange chicken in a single layer in rectangular baking dish. Pour remaining honey mixture over chicken. Bake for about an hour or so till done.
Yes--this chicken recipe is really tasty! I got it from the pages of Southern Living (what a LOVELY magazine!!).

I got this from Southern Living too! What a fantastic chicken recipe. My husband loved it because it was so moist and tender. We ate the leftovers last night and still delicious. It is my new favorite way to cook chicken!

Wow! What a great simple recipe. I added green onions, red n green peppers, and thin sliced carrots. Tossed them on top of the chicken, which I baked covered for 45 min then uncovered for 20. I served the sauce aver steamed califlower. It was award winning. thank you!
