Mmmm....salmon dragged through cumin- and coriander-spiced oil, then swathed in a coating of crushed almonds and topped with a spicy hot pineapple salsa. Mr. Food Musings and I were in dinner heaven.
After weeks of debauchery in the form of wine tastings, dinners out all over the city and chocolate crossiant breakfasts courtesy of our local boulangerie it was time to settle down. There were my thighs to think about (boot camp is on hiatus, otherwise my trainer would be thinking about my thighs and I'd be thinking about fried chicken) and the health of my heart (though I just had my cholesterol checked and my doctor all but called me a modern miracle, it's so low. Not that I took that as permission to eat omelettes every day or otherwise gorge myself on delicious artery-clogging treats. A less responsible glutton might do that, but me? Perish the thought!)
My mom had clipped and mailed me a recipe from her local newspaper and it has been lying on the top of my toaster oven for a few weeks. That is where I keep all the recipes I want to remember to make. Fire hazard, you say? Pish posh! The creative geniuses among you will immediately recognize a kindred spirit. You see, every morning when I go to make toast I have to move the recipes, and am thus reminded on a daily basis of the Dionysian feast I could make that night for dinner, energy permitting.
Last night I finally got in a groove, and made the best salmon dish I have ever had. Ever. Ever ever ever ever! I served it with a side of organic broccoli, first gently steamed, then tossed with olive oil, parmesan cheese and some lemon zest.

How interesting! I just had pistachio-crusted salmon for dinner recently. I enjoyed the nutty crust, but found it did not stand up to the salmon well enough. The seasonings for this version seem much more fitting ... I look forward to trying it out. Thanks for posting!
